
Cherry Tomato, Red Onion & Butterbean Salad
A lovely, zingy salad. The addition of butterbeans makes it a little more substantial and gives it a nice protein boost.
Ingredients:
200g cherry tomatoes, sliced in half
Half medium onion, finely sliced
Generous sprinkle chilli flakes
2 tablespoons extra virgin olive oil
400g can butterbeans, drained
Juice and zest of half a lemon
Scattering of mint or basil
Method:
Add the tomatoes, onion and butterbeans to a bowl.
Pour over the olive oil and lemon juice, until everything is nicely coated.
Sprinkle over the chilli flakes and seasoning, stirring through.
Finish with a scattering of mint or basil.
Delicious served with some crusty bread, or with some cooked pasta stirred through.
